Guilt Free Banana Bread

 

  Coming off a holiday weekend gave me extra time to hang in the kitchen and prep some meals for the short but full week ahead. I don’t always have a designated meal prep day but this week it made sense to pre plan breakfast, lunch, dinner…and something sweet! It took me less than 5 minutes to whip up this delicious banana bread with simple ingredients I already had on hand. Don’t be fooled by the quick prep and basic ingredient list-this Banana Bread is the bomb and it’s Paleo, Gluten Free, Dairy Free, and free of any refined sugars. I won’t judge if you rationalize it as a quickie breakfast with collagen coffee and a hard boiled egg 🙂

Ingredients:

3 ripe bananas
6 eggs
3 tablespoons pure maple syrup
3 tablespoons almond butter
1 teaspoon vanilla paste (vanilla extract is fine too)
3/4 cup coconut or almond flour (a basic gluten free flour will work but wouldn’t classify this as Paleo)
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon sea salt
3/4 teaspoon baking soda
1/2c-1c mini dark chocolate chips (choose dairy free for the paleo version)

Method:

Preheat oven to 375 degrees.
Mash bananas well.
Add ingredients Eggs through Vanilla and mix well.
Stir in remaining ingredients and be sure they are well combined.
Line a loaf pan with parchment paper (no need to coat with oil)
Pour mix into loaf pan and be sure the mixture is spread evenly.
Bake 50-60 minutes or until tooth pick comes out clean.
Let cool 10-15 minutes before removing from loaf pan and slicing.
Can be stored in fridge, covered for 1 week.

Although I don’t eat Paleo full time, I appreciate a clean Paleo baked good as it keeps the junk ingredients out and keeps the high nutrients in!

Cinnamon helps to stabilize blood sugar levels.

Dark Chocolate contains magnesium which helps decrease the effects of stress, headaches and PMS symptoms.
